Cleaved!

I had the pleasure of competing in the first ever Cleaved competition at Queen of Hearts 21.  I have run a similar contest at Tournaments of Creathorne for the past few years, and so was very excited when I heard that the QoH staff decided to do a mystery box type challenge for their cooking competition.  It was set up so that we were allowed to bring any equipment we wanted to use, but could not bring any sort of ingredients.  Each of us was given a work station (picnic table) to work at and a box containing about 20 items.  We then had 1 hour to complete 2 servings of whatever we wanted using only the ingredients in the box. 
What I was able to come up with was:

Soy Sauce & Lemon Marinated Chicken Leg with a Mandarin Orange Reduction Glaze

Sweet potato and carrot Frittata topped with crumbled bacon and sausage

Grilled English muffin topped with cheddar cheese and a deep fried romaine leaf

Romaine lettuce, and carrot slaw served in a lemon cup
