Hedda's Helping Hands Kitchen: Recipe #2

Flan

Ingredients:
3⁄4 cup sugar
4 large eggs
1 tbsp vanilla extract
One 14 oz can Sweet condensed Milk
1 1⁄2 cup whole milk

Caramel:
1 cup sugar
6 tbsp butter
1⁄2 cup cream
1 tsp salt
Or use store bought caramel*.

Instructions:
Preheat your oven to 350°F.

Caramel: Place sugar on low heat. It will clump but that is correct. Keep
your eye on it so it does not burn. Once melted, remove from heat and add in butter. It will bubble violently. You are doing it right. Then add in cream and salt and mix till incorporated. Pour caramel into the base of your flan pan. I use a 8-10 inch cake pan for mine. In another bowl mix all ingredients till smooth. Pour this mixture over the caramel in your pan. Cover the pan with foil. Find a larger pan that your flan pan will fit into leaving some room around it. In the larger pan fill with water till it comes halfway up your flan pan. Bake in the oven for 1 hour 15 minutes. Place into the fridge overnight to cool completely. Next day when cool. Place a plate over top of the pan and flip over. The flan should fall onto the plate and you can eat!
