1 lb of cooked white fish, flaked
1 whole egg
1 egg yolk
2 tsp Old Bay Seasoning
1 tsp honey mustard
½ tsp dried parsley
⅓ cup mayonnaise
⅓ cup bread crumbs
Oil, for pan frying
Beat eggs, seasoning, mustard, parsley, and mayonnaise together with a whisk. Fold in bread crumbs. Fold in fish.
Form into patties about the size of your palm. Rest in the fridge for at least 15 minutes.
Heat oil over medium to medium high heat. Pan fry each side until golden brown, flipping gently. Rest on paper towels to get rid of excess oil.
